I have just found out that St Elvis was real and has a parish named after him,

No, seemingly he was a 5th or 6th century saint who baptised St Patrick.  His name also has many other weird forms - a Welsh one, Eilw, is also on that sign.

There's also an Elvis wafer for sale on EBay, if you don't mind also eating the words "Happy 40th Mum".
